This coffee is grown at an altitude of 900 - 1700 meters above sea level.


Mexico's crop is of the Bourbon, Maracatura and Catimor strains, and is processed using the washed method.

To prepare pure espresso, it is preferable to extract at a temperature of 91 degrees Celsius with a humidification of five seconds and a period ranging between 26 and 30 seconds.
