It comes to you from the depths of Colombia, specifically from the Quindío region, Armenia city, at high altitudes ranging between 1200 and 1700 meters above sea level, where the Castellón farm is located, which extends over an area of seven hectares in the middle of a picturesque nature, and rises 1450 meters above sea level.
The anaerobic honey processing gives this exceptional crop its unique character; the coffee beans are left to ferment within their slimy film for up to 72 hours in a carefully controlled environment. Afterward, the beans are spread out on raised beds, exposed to sunlight and open air, which enhances their distinctive aromatic profile.
